Apron On: Your first kitchen win.

Make tomato and white bean toast. Practice preparation, seasoning, and putting a simple meal together.

This is a small place to start: a bowl, a fork, some toast, and a topping you make yourself. It is an original practice recipe, with room to adjust the seasoning to your taste.

Gather your ingredients

  • 2 slices of bread
  • ½ cup drained and rinsed canned white beans
  • 1 small tomato, rinsed and diced
  • 2 teaspoons olive oil, divided
  • 1 teaspoon lemon juice, plus more to taste
  • A small pinch of salt and a little black pepper, to taste
  • Optional: a few torn basil leaves

Your tools: a stable cutting board, a suitable sharp knife, a bowl, a fork, a spoon, and a toaster. Bread may contain wheat and other allergens; check every ingredient label if needed.

Before you begin

Wash your hands and clear your work area. Gather and measure everything. Open the beans carefully, drain and rinse them, and measure your portion. Dice the tomato slowly on a secure cutting board, keeping fingertips clear of the blade.

Make it, one step at a time

  1. Mash the beans. Use a fork to mash them in the bowl with 1 teaspoon olive oil and the lemon juice. Leave some texture. If the mixture feels too stiff to spread, stir in a teaspoon of water.
  2. Season. Taste with a clean spoon. Add a small pinch of salt and a little pepper if you like. Add more lemon a few drops at a time.
  3. Toast the bread. Use your toaster according to its instructions. Start with a moderate setting and check the color. You are looking for a surface firm enough to hold the topping.
  4. Put it together. Spread the bean mixture on the toast. Add the tomato, drizzle with the remaining teaspoon of oil, and finish with basil if using. Eat promptly.

Notice what happened

Was your topping easy to spread? Did you like the amount of lemon? Did the toast stay firm long enough to eat? These observations help you make a better version for your own taste next time.

If it feels too wet: drain excess juice from the diced tomato and assemble just before eating. If it tastes flat: try a few drops of lemon, then taste again before adding more salt.

Practice it once more
