Chocolate bark has an excellent beginner advantage: irregular pieces are the entire idea. Spread the chocolate, scatter your decorations, and let the fridge do the next part.
Ingredients
- 12 ounces (340 g) semisweet baking chocolate, chopped
- 1/2 cup (about 25 g) small pretzel pieces
- 24 edible candy eyes
- 2 tablespoons orange or mixed Halloween sprinkles
- Optional: 2 ounces (55 g) white melting wafers for a contrasting drizzle
Make the bark
- Line a tray with parchment. Set out the toppings so you can add them before the chocolate firms.
- Put the chopped chocolate in a completely dry microwave-safe bowl. Melt according to the package, using short bursts and stirring often. Stop heating while a few small pieces remain, then stir them smooth. Do not let water enter the bowl.
- Spread the chocolate into a rough 9-by-12-inch rectangle, about 1/4 inch thick. It does not need to reach the sides of the tray.
- If using a contrasting drizzle, melt those wafers separately according to their package and spoon narrow ribbons over the chocolate.
- Scatter pretzel pieces, eyes and sprinkles over the surface, then press very lightly so they stick. Leave a little space between the toppings to make breaking easier.
- Refrigerate for about 30 minutes, until firm enough to lift. Break into roughly 12 pieces with clean hands. If it bends rather than snaps, chill a little longer.
Make it easier on yourself
A rimmed tray catches wandering sprinkles. A flexible spatula spreads the chocolate. This method does not temper chocolate, so it may soften at warm room temperature or look less glossy than a shop-bought bar. That is expected.
Rescue notes
Decorations falling off? Add them while the surface is soft and press gently. Bark too thick? Break it into smaller pieces rather than forcing large slabs. Chocolate turning grainy while heating? Stop; more high heat will not fix scorched chocolate. Follow the package troubleshooting advice or begin again with a small amount.
Store and serve
Keep the set bark in a sealed container in the refrigerator and serve in small batches so it does not soften on the table. For best texture, enjoy within about five days; pretzels gradually lose crunch. No long-term shelf life has been tested.
