Sometimes the most useful Christmas food is the thing you make before everyone starts eating the decorations. These little pizzas turn ordinary lunch into a festive pause, and they give you a reason to practice preparing toppings before switching on the oven.

Ingredients

  • 3 English muffins, split into 6 halves
  • 6 tablespoons prepared ready-to-eat pizza sauce
  • ¾ cup (about 85 g) shredded mozzarella
  • ½ cup thin red and green bell-pepper strips, washed and prepared
  • Optional: a little dried oregano

This makes six small pieces, not necessarily six complete meals. Add fruit, salad or another side to suit appetites. The recipe uses no raw meat. Check muffins, sauce and cheese for wheat, milk and other allergens.

Toast, top and warm

  1. Wash your hands, prepare the peppers and preheat the oven to 400°F. Set out an oven-safe baking tray.
  2. Lightly toast the plain muffin halves. Place them cut-side up on the tray.
  3. Spread each with 1 tablespoon sauce, leaving a small border. Divide the cheese evenly between them.
  4. Arrange a few thin green pepper strips in a rough circle, with a red strip as a little bow. Keep toppings modest so the muffin can warm evenly. The peppers will remain a little crisp.
  5. Bake about 5–7 minutes until the cheese melts and the muffin edges are lightly golden. Check early and follow any relevant product instructions.
  6. Use dry oven mitts to remove the tray. Allow the pizzas to cool to a comfortable eating temperature; melted cheese and sauce can be much hotter than the bread feels.

If the wreath disappears

Cheese moves as it melts. Keep the next pepper ring a little wider and use fewer pieces. A red-and-green pizza still feels festive even when the bow looks more like a happy squiggle.

Make a small lunch station

Let guests top their own lightly toasted half at the table, then have an adult manage the hot tray. Keep extra cheese and other perishables refrigerated until needed. A vegetable Christmas tree makes an easy partner.

After lunch

Follow FDA buffet guidance: refrigerate eligible leftovers promptly, and discard perishables left without temperature control for more than two hours, or one hour above 90°F.
