Good shortbread already has the texture you need. Your contribution is the chocolate finish, the little decoration and the thought behind sharing it. That counts.
Ingredients
- 16 plain, fully baked shortbread fingers
- 6 ounces (170 g) semisweet baking chocolate, chopped
- 2 tablespoons finely crushed candy cane, sprinkles or finely grated orange zest; choose one
For the simplest storage, choose dry sprinkles or crushed candy. If using fresh zest, make the treats close to serving and refrigerate. These versions have not been shelf-life tested.
Dip and decorate
- Line a tray with parchment. Check that your shortbread is cool, dry and sturdy enough to hold at one end.
- Melt the chocolate gently in a dry microwave-safe bowl following the package directions. Stir between short bursts and stop heating before the last tiny pieces disappear; stirring can finish the job.
- Hold a shortbread finger by one end and dip the other half. Let excess chocolate drip back into the bowl. Set on parchment.
- Add a light sprinkle of your topping while the coating is still soft. Decorate a few biscuits at a time so you do not race a whole tray of setting chocolate.
- Let the biscuits set for about 30 minutes in a cool room, or refrigerate until the chocolate is firm. This untempered coating may soften in warmth.
When a biscuit breaks
Dip the broken end or set the pieces aside as the cook’s sample. If many biscuits are too fragile, spoon a little chocolate over their tops instead of submerging them. Smaller pieces are still nice beside a cup of tea.
Package with a little breathing room
Place fully set biscuits in a clean, food-safe box or container, with parchment between layers. Keep decorations outside the food-contact surface. Add the ingredient list and date made if giving them away.
Storage
For the dry-topping version, keep airtight in a cool room and enjoy within about three days for best texture, refrigerating if the chocolate softens. For fresh zest, refrigerate and serve within one to two days. These are conservative planning suggestions, not independently validated shelf-life claims. Avoid warm cars and postal shipping.
Shortbread commonly contains wheat and milk; chocolate and toppings may add soy or other allergens. Read the complete labels and do not promise an allergy-free result from a shared kitchen.
